Description

If you’re in the mood for a fuss-free, flavourful dinner, you must try this Mutton Sausage and Sweet Potato Casserole by Zola Nene. It’s oh-so-comforting, and you only need 8 ingredients. 

Start by roasting O-So-Orange Sweet Potatoes, drizzled with Forage and Feast Cold Extracted Extra Virgin Olive Oil and Forage and Feast Wildflower Honey, and coated in Forage and Feast Datterino Tomato Pasta Sauce. Once the sweet potatoes are tender, add mutton bangers and sweet baby broccoli. Pop it back into the oven for 30 minutes, and dinner is served!

Directions

 

1. Preheat the oven to 200ºC.

 

2. Wash and halve the sweet potatoes lengthways, place them into a roasting dish, drizzle with olive oil and honey, and season with salt and pepper to taste. 

 

3. Pour over the Forage and Feast Datterino Pasta Sauce, add a dash of water to the bottle, shake and add the liquid to the dish. 

 

4. Cover with foil and roast for 1 hour or until the sweet potatoes are tender.

 

5. Add the sausages to the roasting tray and top with the broccoli, then return to the oven to roast for another 20-30 minutes or until the sausages are cooked through and golden.
